Grease trap systems are normally buried in the ground and consist of some piping and a tank. There are also under the sink type grease interceptors.
The tank separates the grease from a restaurant so that the grease does not flow into the septic or sewer systems downstream. If the grease were to make it past the grease trap system, then it would clog the piping downstream as well as the lift stations.
There are two chambers inside the grease trap. The upstream chamber is the larger of the 2 and captures the majority of the grease. The second small chamber captures the balance. Then the grease free water flows out the discharge side of the smaller tank into the septic or sewer system.
Trouble starts when the grease traps are no pumped out
on a regular basis. The grease will form at the top of the tank and work
its way down as more and more grease accumulates. Then if it is not cleaned
out, the grease will form into a hardened layer of grease. This hardened
layer cannot be removed by a normal septic tank pumper truck. That is why
was also have the jet/vac or Vactor type trucks with the greater cleaning
